Pulling the Perfect Shot of Espresso with Capresso EC Select

Pulling the perfect shot of espresso barista-style takes skill, patience and practice with a professional-quality espresso machine, like the EC Select.

A perfect shot looks like a “mouse tail” coming out of the bottomless filter.

Screen shot 2014-04-16 at 4.38.25 PM

he way the coffee flows out of the portafilter can help you identify the problem areas with your coffee shot and help you brew the perfect espresso.

DripsDrips GeysersGeysers BlondingBlonding
Too darkToo Dark Multiple StreamsMultiple Streams Too slowToo Slow

(Drips) When “mouse tail” is off to one side or dripping around the edge, the ground coffee is not evenly tamped.  Hold portafilter flat when tamping and apply even, flat pressure.

(Geysers) Channeling can be identified by sputters and geysers. This is caused by uneven tamping or uneven grind size.  Ensure even pressure is applied when tamping the ground coffee.  Adjust the grind size slightly using a conical burr grinder.

(Blonding) Blonding occurs when the shot is under extracted and is too light in color.  More coffee grounds should be added to the sieve.  You can also adjust the grind size a little finer to correct a light colored shot.

(Too Dark) An overly dark shot indicates too much coffee was added to the sieve or grind is too fine.  Add less coffee and adjust the grind size slightly coarser.

(Multiple Streams) Overdosing of espresso in portafilter can cause multiple streams.  Add less ground coffee to the filter.  Adjust the grind size slightly and only one setting at a time.

(Too Slow) Flowing too slow can be an indication that the ground coffee was tamped too hard or ground coffee is too fine.  Apply approximately 30 lbs of pressure (the same amount of pressure you would use when casually leaning on a table for support) when tamping the espresso into the sieve.  Adjust grind size slightly coarser.

Other tips: We recommend using a conical burr grinder for precise adjustment of the grind size. Consistency of grind size is the most critical element in brewing with a bottomless filter. Adjust the grind size one step at a time to experiment to improve results. Even when you find the right grind size, you may still need to adjust from one day to another as the beans can be altered by moisture in the air.

Coffee Spice Rub

Create a unique blend of spices with the Capresso Cool Grind Coffee & Spice Grinder, including our Coffee Spice Rub. Use the Cool Grind to grind whole coffee beans, whole peppercorns and sea salt for the recipe listed below.  The grinder unlocks the fragrance and flavor of spices to help you make a delicious and aromatic meal.

Coffee Spice Rub

1 serving

  • ½ teaspoon light brown sugar
  • ½ teaspoon Five Pepper Blend peppercorns, ground
  • ½ teaspoon sea salt, ground
  • ½ teaspoon red chili pepper flakes
  • ½ teaspoon coffee beans, ground
  • ½ teaspoon garlic salt
  • ½ teaspoon paprika

Mix ingredients. Use as seasoning for a 2-3 ounce steak.

If using Cool Grind to process several different dried herbs or spices in one unit on the same day, we recommend cleaning the unit after each ingredient to prevent flavor transfer.  Simply unplug the grinder, wipe out the bean hopper and lid with a damp cloth and dry. Processing a small amount of uncooked rice can also aid in absorbing flavor.

Tips for Using Capresso Milk Frothers

From a traditional cappuccino to a unique fruit-flavored latte, Capresso’s line of automatic milk frothers offers the tools to help you create delicious milk-based beverages from any type of milk, including soy, silk, almond, coconut and more. Each machine offers three temperature settings—Hot, Warm and Cold—allowing you to make unique beverages year-round.

Some of our most popular recipes include: Bedtime Warm Milk, Speculoos Cookie Butter Latte, Frothed Mudslide and Brazilian Hot Chocolate. Here are some tips to help you prepare these delicious recipes and give you the skills to help you create recipes of your own.

  • When making hot chocolate, always use finely grated or shaved chocolate. Chocolate syrup also works well.
  • If using a flavored syrup or powder, add a little at a time to the pitcher. Do not place too much syrup or powder in the pitcher at once as it may cause the ingredients to become stuck around the frothing/heating disk. If using a spread, such as peanut butter, heat with oil or butter to turn into a syrup consistency.
  • When making an iced drink, select the cold setting. Never pour hot milk over ice, as bacteria can grow.
  • Non-fat or skimmed milk produces the foam with the largest bubbles, making it light and airy.
  • Some milks are not optimal for making foam for cappuccino because they do not have the proteins to support the milk bubbles. These milks should be heated rather than frothed. This includes ultra high temperature (UHT) pasteurized organic dairy milk, nut milk and lactose-free milk.
  • Fresh, cold milk is a key factor in achieving good froth.

Grind It: The Right Grind Setting for Capresso EC PRO

EC PRO LifestylePulling the perfect shot of espresso is an art. There are many factors that go into preparing the shot, including grinding whole bean coffee at the correct setting.

When brewing with your Capresso EC PRO, follow these tips for a bold and delicious espresso:

  • Use a Capresso Infinity Burr Grinder to obtain the correct grind size.
  • If using the Double Spout Filter with 2-cup sieve, use the “Fine” setting. Set indicator dot to the 1st or 2nd Fine positions. Using the 2-cup sieve allows the user flexibility in the grind size.
  • If using the Bottomless Filter with bottomless sieve, use the “Extra Fine” setting. Set the indicator dot to the 2nd or 3rd Extra Fine position. The bottomless sieve requires a precise grind size and may need to be adjusted a few times to achieve the perfect brew.

Grind size is critically important, especially when using the Bottomless Filter. Different types of coffee may require a slight adjustment to the grind size.  Coffee that is fresh compared to coffee that has been left out will also require adjustments. A conical burr grinder, such as the Capresso Infinity Conical Burr Grinder, can make these fine adjustments.
